Ranch Bake

Finally recovering from mofo and thanksgiving.....I wanted to share what I made for dinner tonight!

The recipe has a lot of prepackaged stuff in it, but I made my own ranch and seitan so it wasn't expensive to make at all! I did make a few changes (of course). I didn't presoak the bacon bits, I subbed about 3/4 cup homemade seitan for the lightlife chick'n and I omitted the vegan cheese. I just added a little more ranch sauce.

Here it is right out of the oven:

The ranch sauce is something I modified from an older recipe. It's not a perfect substitute, but it works for me and it's mostly easy pantry ingredients. I can't remember where it came from. Here's my (approximate) measurements.

Vegan Ranch
1 TBSP vinegar (apple cider or red wine)
1/2 cup non-dairy milk
1/3 cup vegan mayo
1 TSP onion powder
1/2 TSP garlic
1/2 TSP dill
1/4 TSP black pepper
1/2 TSP thyme
2 TSP nutritional yeast

Blend until well-mixed.


One thing I liked about this ranch bake recipe was the dough! I can see it coming in handy for making all kinds of wrapped-and-baked stuff. It's quick and easy to make, and tastes great. MMMM!
